Soft cheese produced with cow's milk
Carducci is processed, by our cheesemaker, in the name of the most ancient traditions, making sure that it has a fat and creamy paste. These qualities and its sweet taste make it unique and characteristic. It has a soft, compact, elastic paste tending to creamy texture with a sweet and aromatic flavor, sometimes acidic, which becomes more and more intense with aging. At the nose It is delicate, with reminiscent of mountain pasture grasses, more intense during the summer season.
